Our venison is 100% wild - ethically wild-shot from free-roaming deer around Castor and the surrounding villages in the John Clare Countryside. It's never farmed.

Our deer are wild-shot using ethical practices and lead-free ammunition, ensuring both animal welfare and the cleanest possible meat. They live entirely on natural forage - woodland browse, pasture plants, and seasonal vegetation.

Yes. All our deer are fully traceable - we know exactly when, where, and by whom it was shot, and how.

Venison has a rich, deep, "game-forward" flavour, often described as similar to beef but with more depth and earthiness, and less fat than most beef cuts.

Wild venison is naturally lean, low in fat, and high in protein, and it's a natural source of iron, B vitamins, and essential minerals.

Compared to beef, venison is naturally leaner and lower in fat, while still being high in protein and a source of iron and B vitamins. As with all wild game, this can vary by cut.

Our venison is butchered and hung for 48 hours before being frozen, to preserve the best possible taste and quality.

Store at -18°C to maintain freshness. When ready to use, transfer it from the freezer to a plate in the fridge and allow it to defrost slowly - roughly 10–12 hours per kilogram. Let it come to room temperature before cooking for the best, most even result.

As with all our produce, pictures are for illustrative purposes only. Since our venison is raised entirely naturally, each cut can vary slightly in size and shape - but the taste and quality are always consistently high.
