Venison Sirloin
Taken from the lower back, venison sirloin is a naturally lean and tender cut with a fine grain and a deep, refined flavour. Carefully trimmed to remove excess sinew, it offers a clean finish that highlights the quality of wild venison. As with all wild venison, sirloin is low in fat, high in protein, and a natural source of iron, B vitamins, and essential minerals.
Similar in shape to a classic beef sirloin, this cut excels with straightforward cooking: seared over high heat to rare or medium, then rested to allow its rich, game‑forward character to settle and develop.
Sirloin is ideal for elegant steak dishes, cast‑iron grilling, or slicing thinly for bold, flavour‑driven plates. Pair with earthy ingredients like wild mushrooms, caramelised shallots, or root vegetables to complement its natural depth.

Frozen Fresh:
Upon being butchered and hung for 48 hours, our venison is frozen, preserving the exquisite taste and quality.
