Cut from the hindquarter, venison rump steak is a firm, full-flavoured cut prized for its bold, deeply savoury character. Carefully trimmed to remove excess sinew, it delivers a clean finish that lets the quality of wild venison shine through.As with all wild venison, rump is low in fat, high in protein, and a natural source of iron, B vitamins, and essential minerals.
Much like a traditional beef rump, this cut is best suited to fast, high-heat cooking - seared hard to rare or medium-rare, then rested to keep it tender and allow its rich, gamey depth to come through.
Rump steak is perfect for hearty steak dinners, barbecuing, or thin-slicing for punchy, flavour-led dishes. Pair with earthy notes like wild mushrooms, blackberry or juniper jus, or roasted root veg to bring out its natural richness.

Frozen Fresh:
Upon being butchered and hung for 48 hours, our venison is frozen, preserving the exquisite taste and quality.
